Prologue

Well, I did finally unpack, albeit just over a week after I got back. I think a part of me is still in India and it's that part of me that keeps pulling me back to this amazing country.

Both Niki and I needed to have a week or so just chilling out and getting back into the different rythms of our daily lives, her in London and me here in Port Macquarie, before we shook of the last remaining covering of dust and got down to the business of putting the cookbook together.

But, be warned, it is not your normal cookbook. Firstly, it's totally vegetarian and secondly its about the journey as well as the food. And if you have ever travelled in India you know that travelling and food go hand in hand (or is that hand in mouth ?)

The layout is not like most other cookbooks where you will look up the index to find the recipe you want. We decided to take you with us as we travelled all the way from Mumbai, down the west coast and then over to the east coast, finally ending in Calcutta, discovering the different region's specialties as well as the amazing people who grow, transport, cook and eat it.

Chai Recipe

INGREDIENTS:

8 teaspoons black tea
8 whole cloves1/2 pint condensed milk1/4 tsp ground cardamom1/2 tsp ground gingerSweetner (my favorite is brown or raw sugar - honey is good too, but dont cook it, add it at the end)

PREPARATION:


Steep 8 teaspoons of black tea in 4 cups of hot water, for 5 minutes.
Strain out tea leaves, and add cloves, cardamom and ginger.
Simmer for 10 minutes.
Add milk and sweeten.
Serve in small tea glasses or cups.
Serves 8

Introduction

Most travellers compile their blog along the way. We, on the other hand, didn't get around to it until now. (I haven't even unpacked yet, although I am planning on doing that tomorrow)
No, it's not because we were so busy seeing this site and that site, on the beaten track of sites to be seen, it's because we didn't really plan for it. But we did have a lot of "sitting in one spot long enough to jot down a few notes" and "take a few snaps" travelling on the trains ... watching the amazing landscape wizz by (and sometimes stop for verrrry long periods of time in the middle of nowhere) and meeting the wonderful, resliant people along the way.
So, from my journal entries and Niki's unique observations of this Mother of all continents, together with our photographs, we promise to "fill you in" on what did for that month we were'nt around.

Culinary Escapades is about vegetarian food and the journey Niki McLeod and Urvasi devi dasi made throughout South India during February/March of 2007.
They started their journey in India's most cosmopolitan city, Mumbai in Maharastra on 18th February 2007, and then continued down the west coast to Goa (to recover from Mumbai). From Goa they went on to Mysore in Karnataka, Cochin in Kerala, and then across to the east coast to Chennai and Mahabalipuram in Tamil Nadu, ending up finally in the sleepy village of Kuansh in Orissa.

Getting around by what is considered the biggest rail network in the world, Urvasi and Niki discovered the delights of India, her people, and the food they consume with a passion.
India is all about vegetarian food. It's colours. It's tastes. It's aromas. And the many and varied ways that it is grown, transported, sold and finally cooked and eaten.So sit back, pour yourself a cup of chai (see recepie in separate post) and follow this amazing adventure as they introduce you to the real India.
